With summer, officially, right around the corner... lots of fresh fruit will be available. For me the most refreshing and enjoyable fruits, any time of the year, are the melons... cantelouopes, honeydews and watermelon. I usually buy the watermelon already cut and packaged.

As a child, I remember my Mom and Dad cutting up whole watermelons. They would cut them in to wedges and slices or chunks. They would scrape out the seeds [this is before seedless melons were common] from the chunks, putting them in a bowl to be refrigerated. My Dad would sometime sprinkle salt on his [his children thought he had lost it] ... now we know from the gourmet chefs, that a little salt will enhance the sweetness ... who knew.. my Daddy did! <-734 characters

HOW TO SPY A GREAT WATERMELON 1. Choose a firm, symmetrical fruit that is free of bruises, cuts and dents.

  1. Before you buy, pick up your melon. The heavier it feels, the better -- a good watermelon is 92% water, which makes up most of its weight.

  2. On the underside of the watermelon there should be a creamy yellow spot from where it sat on the ground and ripened in the sun.

HOW TO CUT A WATERMELON: Cut watermelon in half lengthwise. Cut each half in half again lengthwise. Cut each quarter into slices.

DE-SEEDING A WATERMELON: Cut watermelon in half, then in quarters.

Cut through the flesh of the melon along the seed line with a pairing knife.

Now, lift off the piece of the melon you just cut. Using a fork, scrape the seeds from the piece you just removed and the remaining flesh on the rind and enjoy.
