I was the cook for today as Jane was in her care giver classes. We had fresh Pancit (Philippine fresh noodles) in the refrigerator and I only had to find another ingredients in our pantry or in the freezer. I have seen chicken meat in the freezer but I was not hungry for chicken. Instead I used the frozen longganisa, a Filipino sausage especialty, from our freezer.
Here´s the ingredients for this recipe: 4 persons
1 small packed ( 6 pieces) longganisa, fried and cut into small pieces oil for frying 2 cloves minced garlic ½ onion, cut into cubes 1 carrot, washed and thinly sliced ½ deseeded, washed and thinly sliced red bell pepper 2 leaves cabbage, washed and thinly sliced ½ kilo fresh Pancit from the market salt, soy sauce and white pepper to taste 1 spring onion, washed and thinly sliced 2 pieces of calamansi, cut into halves for decoration
Heat the oil in the frying pan. Saute the garlic, onions, carrots and bell pepper one after the other. Then add the fresh Pancit. Stir fry well with the veggies. Add the thinly sliced cabbage and mix well with the other in the frying pan. When all are done, spiced up with soy sauce, a bit salt if you need to, pepper and the spring onions. Then add the fried longganisa into the frying pan. Mix well. Serve on a plate decorated with halves of the calamansi. You can serve this with boiled rice, with white bread or just this food.
Tips: 1. You can use the leftover for your sandwich, for your snack. 2. You can put chili if you want it hot. 3. No need to use glutamate as it´s not good for your health.
