I love ziti and lasagna and can only have them if I make them myself, since I can't eat lactose without looking forward to spending the entire day in bed the next day. My reaction is very bad, a strange poisoned kind of feeling, more than just the usual digestive upset.
Anyway, I used to make it lactose free all the time, and then the shredded mozzarella I used took it's claim to be lactose free off the bag so I was afraid to use it. Then a friend told me that Kraft's Low Moisture Shredded Mozzarella is lactose free, so I purchased that. Instead of Ricotta, I use Lactaid Cottage Cheese. I use spaghetti sauce that has no cheese added, ground meat, and of course, the ziti.
While the Ziti is boiling and simmering, I brown the meat, drain any fat, then add the sauce and heat through. Then I stir in the noodles when they are done.
Finally, into a glass pan it goes, a layer of the pasta mix, topped with both types of cheese, then another layer of pasta mix, then the cheeses, etc., until we run out of the pasta mix. I sprinkle mozzarella on top and sprinkle with Italian Seasoning herbs.
Then into the microwave it goes for about 15 minutes.
While it's cooking, I make a tossed salad.
And that's it. It sure was delicious and so nice to have one of my favorite dishes again!
