In the midst of my flurry of cleaning this morning and early afternoon, I still found an hour to make some more jam. I am trying to use up the frozen fruit in my freezer just in case I find a good deal on fruit this summer that I want to freeze. Today's jam was my husband's favorite of my inventions blackberry apricot jam. If you have access to an apricot tree, try to freeze some because they are great for jam. I usually have tons because my parents have a tree, so I started experimenting. I have yet to find a fruit they don't go well with. I like to freeze some in case I don't have enough of one fruit to make a batch, I will add apricots. They work especially well with berries.
So today's jam tip is to make sure you have a large measuring cup for your sugar. Trust me, you don't want to be trying to stir the jam while measuring out one cup at a time. No one has enough hands for that. If you don't have a large measuring cup, you can also measure it into a bowl before you start so you can just pour it in when you are ready.
