Es Palu Butung is one of traditional foods (or drinks) from Makassar, South Sulawesi, Indonesia. This is some kind of ‘es campur’ as Indonesia said or cold beverage in English. This beverage is perfectly enjoyed in when the weather is hot.


6 bananas, steamed, peeled, cut into oblique
500 ml coconut milk from 1 coconut
30 grams of rice flour
2 pieces of pandan
75 grams sugar
1/4 tsp salt
frambosen syrup

How to make:
1. Dissolve the rice flour with a little milk. Set aside.
2. Boil remaining coconut milk, pandanus, sugar and salt. After a boil, put a solution of rice flour, stirring until thickened and bubbling. Lift.
3. Serve with chunks of banana porridge, porridge frambozen syrup and ice cubes.
