Chicken Inasal is a grilled chicken dish and one of the well known Ilonggo dishes. This is done by marinating chicken pieces in a unique blend of spices and grilling them until done.
Who amongst you in the Philippines haven’t heard of this dish? I will be surprised if a huge number of people will say that they haven’t. Chicken Inasal is all over the place. In fact, several restaurant chains that specialize in this dish are in full swing branching-out to dominate its presence in Metro Manila and the nearby provinces. Chicken Inasal and all you can eat rice, doesn’t this sound familiar?
I’ve been to several restaurants and grills serving this special grilled chicken dish and they were all good. The main question is: Who serves the best Chicken Inasal in the Philippines? In Metro Manila and nearby provinces., there is a good place somewhere in Quezon City and Los Banos Laguna.
First, the Mang Inasal Chicken, Offers stamp-grilling with charcoal, rice wrapped in banana leaves, a marinade concocted out of local spices and herbs, and bamboo sticks for skewers.. Second and last is Mang Toto Chicken Bacolod Inasal,located inside UP Los Banos beside Landbank, This resto is offering in much cheaper price . Their serving range only at Php 75.00 pesos with rice but not offering unlimited rice, compare to Mang Inasal.

So you can choose below 2 option for the Inasal Recipe. It's up to you what will you choose but i recommend the option 2, since I already did that and im lucky to got my dream inasal grilled chicken taste.

1st Option : Chicken Inasal Recipe:

10-12 pcs. chicken (around 4-5 lbs.)
1/3 c soy sauce
1/3 c coconut vinegar
2 stalks lemongrass (chopped)
2 inch ginger (pounded)
1 tsp pepper
1/3 c sugar

Mix all the ingredients except the chicken in a pan. Simmer for about ten minutes. Let it cool. Separate a portion for basting. Marinate the chicken overnight or for at least an hour. Grill chicken pieces until it's thoroughly cooked.

For Basting:
Annatto oil (Aswete oil)
Marinade
Mix the two ingredients together. Baste the chicken as needed.

For sauce or dipping:
1 tbsp soy sauce
1/3 c broth
2 tsp sugar
3 tbsp vinegar
chiles if desired
onions and onion leeks chopped

Mix all the ingredients together. Stir and serve it together with the freshly grilled chicken.

2nd Option : Chicken Inasal Recipe:

Ingredients
2 lbs chicken cut into serving pieces
Marinade:
2 tablespoons ginger, minced
2 tablespoons garlic, minced
3/4 cup lemongrass, chopped
1 cup coconut vinegar
1/2 cup lemon or calamansi juice
1 tablespoon salt
1/4 cup brown sugar
1 cup lemon soda (softdrink)
1/2 tablespoon ground black pepper
Basting Sauce:
3 tablespoons annatto oil (atsuete oil)
1/2 cup margarine, softened
1/4 teaspoon salt
1 teaspoon lemon or calamansi juice

Cooking Procedure:

In a freezer bag or large bowl, combine chicken, lemongrass, salt, ground black pepper, ginger, garlic, brown sugar, vinegar, lemon-lime soda, and lemon juice.
Stir or shake the mixture until every ingredient is well incorporated. Marinade for 1 to 3 hours.
In a bowl, combine margarine, annatto oil (aswete oil), salt, and lemon juice then stir. Set aside.
Grill the chicken while basting generous amount of the margarine mixture.
Transfer the grilled chicken to a serving plate.
Serve with sili and calamansi Share and enjoy!
